It’s not far from the the truth at all to say that Hyde Bar in Galway City treats gin with a religious zeal, putting it at the centre of their stylish cocktail experience.
They have just made a new addition to their ever growing Gin Bible, already hundreds strong, with the release of their second custom made gin.
The very limited batch Hyde Gin was distilled and bottled by the family owned Clonakilty Distillery in Cork, with a strong artisanal streak in this unique spirit.
The Hyde Gin is a blend of three different distillations using 13 botanicals and a whey alcohol spirit. A base distillation, a citrus distillation and a lavender distillation.
The distillers used three separate distillations to exact the maximum amount of flavour from each set of botanicals and then blended them at our maturation site to create a spirit that would be best suited to cask maturation.
It was then matured for three months a second fill European oak Bordeaux red wine cask that had previously been used to create a whiskey expression for Hyde Bar.
These Bordeaux casks are what give Hyde Gin its distinct pink hue, and add a depth and complexity of flavour to it that people wouldn’t ordinarily associate with gin.
Hyde Gin is best served with a chilled premium tonic, and garnished with the citrus and pine notes of lemon and bay leaf.
